Job Full Description
We are seeking a Whey Protein Concentrate (WPC) Operator to support our operations team at our Crescent City Creamery. This position plays an important role in producing high-quality whey protein concentrate by safely and efficiently operating dairy processing equipment such as dryers, evaporators, centrifuges, and filtration systems.
The WPC Operator monitors key production parameters, ensures sanitation and food safety compliance, and helps maintain consistent product quality while following company safety standards, GMPs, and HACCP requirements.
Key Responsibilities
- Operate equipment used in whey protein concentrate production, including separators, heat treatment systems, filtration equipment, evaporators, dryers, and bagging systems
- Monitor flow rates, pressure, temperature, and other processing parameters to maintain product quality and process efficiency
- Record production data and maintain accurate logs for whey tanks, balance tanks, cream tanks, and RO systems
- Troubleshoot equipment issues and report or resolve minor mechanical problems
- Perform routine sanitation and cleaning-in-place (CIP) procedures following cleaning schedules and regulatory standards
- Conduct visual inspections to identify buildup, clogging, or abnormal equipment conditions
- Collect and test in-process samples for moisture, particle size, and product purity
- Adjust dryer parameters such as temperature, airflow, and feed rates to ensure proper product drying and moisture levels
- Maintain inventory of plant cleaning chemicals and assist with receiving and storage of supplies
- Follow all company policies related to Safety, Good Manufacturing Practices (GMP), and HACCP
- Report any food safety or quality concerns immediately to management
- Train and support new team members on operational procedures and safety practices
- Cross-train in other plant areas such as intake when needed
Qualifications
Education & Experience
- High school diploma or GED preferred
- 2–3 years of experience in food manufacturing, with equipment operator experience preferred
Skills & Abilities
- Strong attention to detail and ability to follow standard operating procedures
- Effective communication and teamwork skills
- Ability to read and interpret production documentation and instructions
- Mechanical aptitude and troubleshooting skills
- Self-motivated with the ability to work independently
- Adaptable in a fast-paced manufacturing environment
Certification Requirement
- High Temperature Short Time (HTST) Operator license must be obtained within 9 months of hire
Physical Requirements
- Ability to stand, walk, climb, stoop, and reach throughout the shift
- Ability to lift up to 55 pounds and maneuver chemical barrels using a two-wheeled dolly
- Work at heights on equipment platforms or catwalks
- Must be able to work in environments with loud noise, heat, humidity, moving machinery, and cleaning chemicals
Work Environment
This position works in a dairy manufacturing facility and may involve exposure to:
- Heat, humidity, and wet environments
- Moving mechanical equipment and elevated work areas
- Cleaning chemicals and food processing systems
- High noise levels (hearing protection required)
