The Lead Bread Baker oversees all aspects of daily bread production for a high‑end artisanal Italian market known for traditional methods, premium ingredients, and a commitment to authentic Italian culinary heritage. This role blends hands‑on craftsmanship with leadership, ensuring every loaf reflects the market’s standards for quality, consistency, and flavor.
🥖 Key Responsibilities
- Lead daily production of Italian breads including ciabatta, focaccia, pane Toscano, sourdough varieties, and seasonal specialties.
- Manage mixing, fermentation, shaping, scoring, baking, and cooling processes with precision and consistency.
- Develop and refine recipes, introduce new bread offerings, and maintain traditional Italian baking techniques.
- Oversee production schedules to meet retail, wholesale, and catering demands.
- Train, mentor, and supervise junior bakers and support staff.
- Maintain strict standards for food safety, sanitation, and equipment care.
- Monitor ingredient inventory, place orders, and manage waste reduction.
- Collaborate with pastry, prepared foods, and retail teams to support cross‑department needs.
- Uphold the market’s brand values through exceptional product quality and presentation.
🍽️ Required Experience & Skills
- Previous professional bread‑baking experience required, ideally in an artisanal, scratch‑baking, or Italian bakery environment.
- Strong understanding of fermentation, hydration ratios, dough behavior, and natural leavening.
- Ability to manage high‑volume production without compromising quality.
- Experience leading or training a team in a bakery or culinary setting.
